Which cord do I need for 280X?

You can absolutely do a miniDP-to-DP cable and be fine, you could even do a mini-DP to DVI adapter if you already have a DVI and it'd save you money.
 
You would only really need 1 more display port cable to use the second monitor if the DVI cable is working fine for you.

You could also use a DVI to HDMI adapter attached to the other monitor if you have one and an HDMI cable.

It also appears that your 280x should come with a mini displayport to display port adapter, so you could just get a DP cable for that if you have it.
 
I want to do 1080 x 1920 in portrait mode for both monitors.

All of these cords mentioned won't be an issue correct?
