I wish I had some pictures of a writing desk I put together a while back, came out to 36"x30"x1.5" for the top from 3x 3'x10" long sections of a 10' rough cut board of solid red oak. You could do something similar with a pocket hole jig, drill, saw and 9-15' of your wood of choice depending on what size desk you want.
It sounds like picking the top and legs from Ikea is more to your liking though. Word of advice, make sure you get everything you need before going home since it's a two hour drive for you. They're notorious for not including things (eg. if you buy a desk from them, it's just the top; the legs and hardware are different item numbers and are usually packaged separately)
