I will have to say the Thief , just because it raised the bar.At the time there was no other game like it as far as NPC conversations and overall voice acting. I can remember being wowed by it.

I would have to say Mass Effect (or anything with Jennifer Hale), BioShock and Grim Fandango are some of my favorites. Although I must say for an RTS the voices for Starcraft did a very good job conveying the story.
