What would work best with my SSD setup

I have recently aquired 2 60Gb Force3 drives and will probaby run them in RAID 0, now I currently have my OS running on 2 Intel x25-M G2 drives and games on an external USB 3dive.

Should I keep the OS on the Intel drives and use the Corsair drives for games, or the other way around?

The other way around.

The Corsairs will smoke the Intels, even on SATA 2 ports. Gaming will not be significantly affected, but your system drive will benefit from having the faster drives.
