What to Run? Please, help to enlighten me

I am running a server, its functions are:

File Storage (MP3s, Videos, Programs, ISOs, etc..)
Kazaa, eMule, eDonkey downloader

It is the second system in my sig, except I added another 128MB RAM.

Now my question is, what operating system should I run? I have:
Windows XP Pro
Windows 2000 Pro
Windows 2003 Server (Standard, & Enterprise)

So which OS would be the best for this machine?

From what I see you are gonna do, just use WinXP...

All I am installing is

XP (and some of its updates)
NSW 2004 (only some of it)
Emule
Kazaa
WinAmp
