What the heck is Bonjour, and do I need it?

it helps you find printers, other apple devices, and share files on your local network
 
Here's Apple's Bonjour developer page. If you're using Mac OS X, removing it would probably just make simple things much more difficult than they have to be.

If you're on Windows, it's much more optional, unless you want to do sharing stuff with iTunes; here's Apple's Windows Bonjour FAQ. I see it mentioned elsewhere that VPNs might not like it because of the unusual port range it uses.
