About to upgrade my current rig and I'd like to know what you guys would suggest as a good PSU.

My parts are as follows
Mobo - EVGA 122-CK-NF68-T1 LGA 775 NVIDIA nForce 680i SLI
RAM - Corsair XMS2 Dominator 2 GB PC2 8500
CPU - Intel Core 2 Duo E6600
Hard drives - 2 Western Digital 500 GB SATA 7200 RPM
Video card - 2 XFX Nvidia 7800 GT in SLI
CD Burner - TDK 52 CD burner
DVD Rom - Some old DVD ROM I've had for a while
Sound card - Creative Sound Blaster Audigy 2 ZS (it had the unit to put into the front bay)

I was thinking along the lines of 700W-850? Not sure really. I plan on upgrading my video cards to an 8800 GTX in the future.

one gtx/ultra? Corsair HX 520. SLI? HX620, Silverstone Olympia 650/750

I just noticed that the new Intel CPUs have been released. I'm going to be getting an E6750 instead of the E6600. On anandtech.com they said the power consumption difference between the 1066 and 1333 FSB CPUs was minimal.

I'm thinking of getting this particular PSU; PC Power & Cooling Silencer 750 Quad

Think that will be enough for my rig or is it a bit overkill?

None, I haven't upgraded it yet. Right now I'm using a 550 W PSU for my current rig.

Love my Silencer 750 Quad. You can get it direct from PC Power and Cooling for $170 and they'll even tack on a custom wiring harness if you want.

The Corsair 620HX is a good supply, but the lack of 4 native PCIe power connectors makes it a poor choice for anyone looking to go SLI. The Silverstone Olympia line (prices tend to be better at www.deadeyedata.com than the Egg) or Silencer 750 make more sense, then.

What kind of 550w PSU? Even with SLI a quality 550w should suffice, depending on what exactly it is.

Not necessarily true. That'd be running /way/ too close to rated capacity under load for comfort, in my opinion. A quality 650, sure, but a 550 is pushing it too much when you consider than another $20 gets you piece of mind.
