The gist - folding (at least as we discuss it here) is a distributed computing program put out in order to study the process by which various proteins (typically those related to horrible diseases like cancer/Alzheimers/Parkinson's, etc) reproduce and behave in various environments (at least theoretical environments) in an effort to find a cure. This task, which would normally be assumed by a giant supercomputer, is broken into millions of little chunks which are processed by people such as you and me on our home PC's, with results being sent back for study (hence the distributed computing moniker).
