What is better?

Well, in terms of raw power you will not be able to even come close to that setup for the money you can get out of them. That said, crossfire certainly has issues of its own, and I believe you'll find a more enjoyable gaming experience if you can step your budget to $400 and grab a 7970, or a gtx770. Either card will work great at 1440p.
 
That really is what I'm noticing. The amount of screen tearing is not worth the power I dont need/use.

Is that even a fair price? I've never sold hardware before. The video cards are a little over 1 year old.

Do some searching through the f/s forum and eBay to see what they are going for.
