Between work, home, and on the go, I make many different notes and scribblings of things I want to remember. My method presently is to use Notepad at work and at home to save links and notes that I want to remember in a TXT file, then use Dropbox to sync between the two. Dropbox is also on my iPhone so that I can view my notes there.

But this system isn't working out, because I can't edit or add any notes to anything in my Dropbox on my phone, thus half of my notes are now trapped in the iPhone's default notes app. Is there a site, software, or service that acts as a cloud-sync'd notepad? No bells and whistles; just text? It is essential that it works on my iPhone and can work without constant data access (using a cache, etc).

It's an apple issue, Apple doesn't allow for editing notes. I have dropbox on my Droid based phone, I can create a doc on my laptop, and edit it on my phone

I haven't used the mobile version of it but it has clients for most mobile platforms so i'm not sure about the "can work without constant data access (using a cache, etc)" part.
 
ive used evernote and Google docs i use Google docs a ton now evernote was neat for just general im going to the store and need to jote stuff down but google docs are awesome and a good alternative to dropbox is sugarsync works pretty good you get 5g instead of 250mb

So can I. Exactly what the OP wants without the hassle of having to buy a new phone. Cool, huh?
 
I'm an Evernote junkie. I take notes at home, my phone work. Desktop version is great because it can even take screenshots, phone version lets you do pictures via camera. Google docs is ok, but I've found Evernote just plain easier/convenient to use.
 
I use my gmail email for that. Just create a draft email and edit the body of the email.
 
I don't need additional software. I also don't have ads when I am editing ;-)
In this case, I think (optionally) spending $5 to get the desired capability out of the iPhone is probably a better value than spending $500+ on a new handset, but to each his own.
