VoIP lab?

Applying for a job as an entry-level IMS guy. I'd like to set up a quick and dirty lab to help me play around (as much as possible) with VoIP tech. Software only, as I don't have time to order hardware and have it come in before the interview. Can anyone recommend something to me that would help me learn about SIP, IMS, and CSCF? It doesn't even need to be a lab - But it'd be ideal if it were, that's the best way for me to actually retain any of the info. Right now, I'm just reading Wikipedia. I'd love some sort of additional resources.
 
Project Cleawater, open source IMS being developed by Metaswitch. Can spin it up on AWS or a hypervisor of your choice and play around with it.
