Has anyone compared these 3 as a host. I seem to get the performance out of Win7. 8.1 is giving more lag in my ubuntu and esx vm

Do you mean 7, 8.1 and 10 as a guest? If so then yes, I've seen the same thing. Basically in win 8 and win 10 drive caching is handled differently. For some reason if you take a look at C: in Task Manager you will see the drive pegged at 100%. This causes a variety of performance issues. I tested this to death and so far I found that if I put the VM on really fast disks like RAID 10 or SSD's the problem pretty much vanishes.

i have ran 2012 r2 (8.1) and 7 pro with no preformance loss in the vms. i use them for gaming. my hardware is
dual e5-2670's
amd s7000
r9 280x
44 gigs ram
3 seagate 15k.7 in raid 0 (probrably 6-800 mb/s)

Those drives on that controller are strictly for the fileserver's data. C:\ drives and program files drives are not.
