Just setup a box on my network to play around with Untangle in bridged mode, I like it. I've read their instructions on virtualizing it but its not that clear to me. With my physical box, I have it sitting between the internet port of my router and my LAN, would I need to physical nic's in my ESXi box to do this? Otherwise I am not sure how to duplicate the physical network setup virtually, either that or I don't get it.

Thanks

Two physical nics is certainly simplest. If not, you would do some kind of vlan setup. I'd stick with 2 nics if you can.
