Is there an iOS app that will let me connect to a Bluetooth device and read all the live data being pushed from the device to the host?
 
I have one suggestion for you.
It is called "Network Spy Tools" in the App store.
This is the best Network spy tool to find out the data being transferred through Bluetooth.

I don’t see this app in the App Store.
