I just tried them without a PhysX card. I can install and play the maps, but my FPS goes into the floor after about 30 seconds.
There's only 2 CTF maps. Tornado is the one in the video where a tornado is going through the map and tearing everything up. You can break up most buildings, glass, etc... Lighthouse is a more indoor map where in order to get to the other side you have to shoot certain places in the walls to break them away.
I can run UT3 at full settings, 1680x1050, and never drop a FPS below max (62) on normal maps. I'm curious to see how much PhysX card does to improve the framerate on their maps.
I have a physx card and it run that levels pretty god, but there's some ocasions that the framerate drops to the 20's. Running with a cpu is worthless because it don't have the power to process that amount of physics.

Lighthouse is actually more destructible then you might think. It's at that time when you try blowing up a wall and succeeding that things become very cool. It becomes awesome when you realize there are lots of walls to make "doors" out of. I don't think it is possible to make a typical UT map fully destructable... it would make running a flag to the inside your rubble of a base hard.
I personally like Tornado better though... the tornado actually becomes a nice gameplay element because you have to be aware where it is while watching out for the debris it can kick up. It adds a nice element to a fairly simple map.
For those w/o the PPU, the super drop in framerate after 20-30 seconds is the tornado hitting the zone. It takes a bit for it to appear.
I'm at 1600x1200 w/ PPU and see no notible drain on performance in the Physx levels.
