Using SATA with ATA 133

Hey, I currently have a 120GB Maxtor 6L120P0 ATA133 hard drive. I was wondering if I ordered this:

HITACHI Deskstar 7K80 SATA 3.0GB/s

would I be able to use my Maxtor for windows, music, games, and use the SATA for linux in the same computer? thanks.

and how would I be able to choose which hard drive I would want to load?

A boot loader,

LILO, or GRUB, though supposedly you can set the windows boot loader to load linux with a little work.
