I've got a spare GTX 260 lying around. If I hooked that up as a PhysX card, would I be limited to using DirectX 10 or would the DX 11 on my GTX 560 Ti still work?

DX 11 should work fine.

I suggest doing some testing with fluidmark before and after to determine if it's worthwhile.

PhysX would be processed on that card via CUDA and would have nothing to do with DirectX either way.

Only your main card would have anything to do with actual video rendering.
