Using LCD display with temperature probes

I'm planning to buy a 20x4 LCD display, and I wonder if it is possible to use the display with temperature probes for CPU, GPU, water and so on?
 
I believe some of the LCD programs are compatable with Motherboard monitor. That would show the processor temp. I'm not sure about using seperate probes.

For separate probes? What kind of hardware (probes etc) and software is required then?
