Using Higher Refresh Rates

I've been doing some research on the korean 27" ips monitors and came across some info on overclocking and tweaking the monitors and videocard drivers to allow higher refresh rates.

What are the benefits to using a higher refresh rate and what type of difference can be seen going to higher refresh rates. I just dont understand what higher refresh rate do visually.

Any info would be great, thanks.
 
Refresh rates = number of frames shown per second.

Think of it this way, Games look choppy at 30 frames, look smooth at 60 frames (most monitors) and a higher rate like 120hz is down right sexy/smooth.
