Upgrade question.

Ok, I've been with my Seagate 120GB SATA 7200.7 HD for a few years. And I want to get into something a little bit faster. Say maybe a Raptor HD. Maybe even the 150GB versions. BUT, I am wondering just how much of a performance gain I will see. As well as if I purchased 2 of them, what more of a gain would I see if they were in RAID?

You would probably see a 'significant' increase, but it is hard to quantify. If most of your work does not touch the HDD, you would see very little difference. RAID-0 will do very little on top of having the 150GB Raptor.
