So I've got an Athlon 64 4000+ o/c'd at 2.8GHz. for what, what would be the nxt set up? How much faster is the FX60?

An FX-60 is clocked by default @ 2.6 for both cores, and it has more L1 and L2 cache than your 4000. For you, upgrading to this would be kind of a waste, unless you are doing a shitload of multitasking (i.e. playing games while burning DVDs, etc.).

If you are dead set on getting dual core, get an Opteron 165. They are 3X less expensive, and they can usually do FX-60 speeds with default voltages. I just helped a friend set his Opty 165 up yesterday, and we were able to do 2565 with default voltage (default is 1.8). People rave about these things for a very good reason :)

Dual core is pretty much the only upgrade you can do. If you go for dual core, Opteron 165 is where it's at like Rocco said. Your computer is pretty much maxed out, god knows you've spent plenty of money on it already. Why not get a big ass LCD?
