My current build is the following:

i7-930 @ 3,5 Ghz
Gigabyte GA-X58A-UD3R (rev. 1.0)
Mushkin 998677B - 6GB (3x2GB) DDR3 PC3-10666 7-7-7-20 Blackline
Corsair HX 850W
PowerColor Radeon HD 5870 1GB GDDR5
A whole bunch of hard drives

6 GB of RAM just isn't enough anymore, so I need to upgrade and I'm not really sure where to go from here as my current RAM aren't being made anymore.

I'm thinking that 12 GB should be enough, so what would you recommend I get? Should I sell my current RAM and just get 12 GB straight up, or would it be possible to just buy 6 GB and have it work as well?

You can get a 12GB kit for $65 while another 3x2GB would cost around $40. I wouldn't mess with mismatched ram for $25 - whatever you can get for 3x2GB.
