Updated 4 computers in my house to Win10 1703

I don't love Windows 10 but I've gotten used to it...definitely a lot of tweaks and crap to disable but I remember having to do the same with Windows 7 as well...I went back and used my Windows 7 machine recently and it definitely looks dated compared to 10...overall it's impossible to resist W10 as it's only going to become more prevalent as Windows 7 gets closer to EOL
 
Has anyone ever gotten an issue where if you prepared a custom installation disc with 'select' 'features' removed, the features get reinstated after an automatic update?

I am installing a new Win 10 system on another computer in the near future, and I would be building a custom ISO with Cortana, Telemetry, OneDrive and some windows store apps removed off the ISO.

I have only tried removing the said features post installation, never pre-installation, but they never reinstated themselves, despite having used auto updates.
