Trying to piece together awesome Sandy Bridge Eyefinity Gaming Rig. Any help?

Should be an awesome rig.
For a PSU, the Corsair is a damn nice unit and has a nice rebate. I think Newegg is offering 10% off Corsair PSUs this weekend too.
For the memory, for $20 more you can up the speed to 1600 which would be worth it in the long run, especially for OC'ing. http://www.newegg.com/Product/Product.aspx?Item=N82E16820231314
Depending on your monitor size and resolution, may be wise to get one 6970 card right now and look to add a second one down the road. The extra money spent on that could be worth it.
Just my thoughts though, either way congrats on the new SB build.

- I'd get DDR3-1600 not 1333, minor price delta and a bit more speed...

- For bang for the buck, get a sandy bridges 2500k, save $100 over the 2600...

- the new Sandforce 2000 and Crucial C400 SATA-6gbps SSD's are due out soon, ~450mbps read/write and slated for $220-240 for 120gb due to being on 25nm flash, I'd wait and get one of those

if you want maximum stability, make sure to get memory that is listed on ASUS' QVL list. that's not to say that memory not on the QVL list won't work, but with soooo many memory options out there why not get something that is approved by ASUS?

EDIT: and if you plan to overclock, that Memorex air duster is a poor choice. i'd go with something higher quality, like Fellows
 
I'd get an Antec P183 and use NVIDIA cards for NV Surround instead (GTX 570s?) , but that's just me. I also have to wonder whether a 1200W power supply is really necessary here. A high-quality 850-watt unit should be ample.

EDIT: Oh, and I wouldn't buy a board from a Taiwanese manufacturer either.
