Troubleshooting drive slowness

Ok so I have a machine that has 3x 2tb hard drives and had stablebit drive pool setup. I removed the OS drive and put a new drive in it and installed server 2012 R2 Essentials. I am trying to merge all software from the other 3 drives to my single drive to cleanup a mess that I have.

The issue I am having is super slow speeds copying or moving files from any of the 3 to my main OS drive. How can I determine my issue? It is not a consistent copy of files but more of a start to go... then hangs for a few minutes then go then slow....

I am not used to troubleshooting drives so need some pointers where to start.

fyi MoBo is Supermicro X7DVL-E with 2 x Xeon CPU and 24gb ram
 
I'm wondering if it is more than just the drives...

what I am seeing is copying files from say drive E to drive C... it will pause on a folder/file that is a .jpg... and sit there for 2 minutes...
if I try to bring up Task manager it is like the system is hung or even computer management... system like stops....

(Just realized I got my 1tb in there.. but I got 5x 2tb blacks on my shelf to go in once I clean these files up and remove these drives and figure out slowness)
 
Are the "3x 2tb hard drives" different from the 3x WD Black 1TB drives?

Do you still have the Stablebit client installed?
