I currently use an LG C2 as my productivity/video editing/coding station. Haven't gamed since we had a kid really. With all the video editing, making sure Premiere's windows don't feel cramped is a priority. I was considering going for the Dell 52" 6k monitor, but now I'm considering a triple setup that might have more of the footprint of my current monitor. Due to space constraints, I don't think I can go much wider than my current setup, which is a 40" desk. (C2 is 36.6" wide). 3x 4k 27" would be significantly more resolution than even the 52" Dell, but not sure about monitor choices that have slim/minimal bezels for a vertical setup.
 
If you go too high up your neck will hate you, and you'll end up avoiding using any of your screen that's too high.

I built a custom desk where my monitors can go lower than my keyboard. Looking down is way less of a problem.

I would say if the top of the monitor is above your head it's too high and will be uncomfortable, but that also depends how close you sit to your screen.

I've gotten very used to being ~2' from my 42" 4k screen. The corners are a little awkward, yes, but that's why i'm considering extra monitors that I can angle towards me.
 
I run a 6 monitor configuration, with 3 on the bottom and 3 on the top. I absolutely use all 6 monitors, with each monitor largely having it's own purpose. But I realized pretty quick that the top row is really only useful for stuff that I glance at occasionally. Spending any significant amount of time looking at the upper monitors is just not friendly on the neck. Having a 3rd row even higher would be basically useless. Angling the monitors downward might help with any off-axis viewing-angle issues, but it won't change how much you have to tilt your head/neck upward.

I transitioned from 3 in vertical after years of use to this LG CX48 and I could not be happier. With things like video editing, having the horizontal pixels was a big win. I would suggest sizing some of your editing windows to the pixels you would be restrained by in 3 vertical and see if that gives you an idea of what you are working with.
