If the game has a demo recording facility just use that. If not it'd work, though you'll probably want to either record and play the game on different rigs or record to a VCR. Either way you'll be recording off the TV-out on your vid card. Recording video takes a fair amount of CPU and bus bandwidth, so it'll affect your gameplay and recording quality if you're trying to do so on the same machine. If you had dual CPUs you might be able to get away with it.
