In games you will not see a difference over your current raptors. Now in general OS stuff, yes you will for sure. I always recommend a 64-128GB SDD for OS+apps and maybe 1-2 core games and then a nice 7200RPM 1-2TB drive for games etc... Or even smaller depending on storage requirements.
I've ended up using Intel and Crucial SSDs after 3 out of 6 OCZ SSD failures, the older Vertex2 models. (The time need to recover from any failure is significant even if the supplier does RMA with no problems. In my opinion, ain't worth future investment in their products with the failure rate I've seen.) Intel has the lowest failure rates but it also costs more. I use the Intel version (a 510 120G model) on my business computer because of their reliability. I also use the Crucial M4 120G SSD for the apps on my business computer.
Since you have the capability to use SATAIII (6G) that would be more future proof. Now that this SATAIII generation of SSDs is becoming more reliable since their original introduction, brand choice of an SSD maybe less important.
RAID0 could help with the gaming problem you note but nobody can assure you that it will solve the problem.
Intel's 520 Cherryville is already available at some retailers, but there are lots of good drives to choose from. Game loading is usually not able to be sped up all that much -- all the compressed textures and other game assets are dependent on other performance aspects of a system too. I actually run a lot of my Steam games off of a USB3.0 2TB external drive just because the majority of them don't really load faster on any of my various and sundry SSDs. That, and I don't play most of them that often.
