Temperature probe placement

You know those little flat thermistors that come with temperature display devices? What's the best way to use those? I've read some reviews where they placed them between the CPU's IHS and the heatsink, but everything I know about cooling just shouts "WRONG" at that. So where do you place those, to get a good idea of CPU/GPU/NB temps, but without reducing cooling capacity?
 
Between the HSF and IHS, butted against the edge of the IHS - not directly between the 2...Of course to get a bit more accurate of a reading, you'd want to place the probe against the edge of the de-lidded core, but not for me..Not enough balls to put my $300 CPU under the knife. [edit] Don't even have an external probe though, so someone feel free to contradict what I said if wrong..[/edit]

[e2]Also, if you've got the balls, you could try an under socket mount..Not sure if it's possible with A64s though (forgot if there's resistors on the bottom..), I may have seen it done w/ AXP/P4s..Running the probe wire under the proc above the socket, and perhaps grinding out a small tab (to run the wire) from the ZIF socket area so you don't throw the CPU mounting out of whack.
