I'm wanting a cheap tablet that I can use to take notes while walking. My recent experience with an iPad Mini was that it was "good enough" for accuracy, but the processor lagged if I spoke too much, too quickly.

Has anyone experience with other models in that ~$250 price range? And how do they compare to iPad Mini?
 
There are different software options you can probably also install on your ipad.
The software and Mic you're using will be more determining than the actual device you are using.
