If I switch to watercooling from fans, how much of a performance increase could I expect to see from less heat on the components?
 
Very little, unless you're being held back by temperatures.

Quiet operation, lower temperatures, and being the ultimate in geek chic are the benefits to most water systems these days. Gone are the days that chips crash if they go over 60c.
