I made the assumption the SPDIF optical output would support 5.1 sound on my Gigabyte X470 Gaming Ultra, it appears it does not. I can't find much on what my options are other than 3.5mm cables with rca adapters.

I prefer not to run the audio off the video card, but I'm not sure if I can run the audio off the hdmi output on the mobo...as it the processor(2600x) doesn't have an IGP so I'm not sure it even works as I'm assume it would need to both audio and video signals....

I'm using display port for a 1440p 144hz video signal from my 1080ti, the primary function is gaming so I'm not looking to do an HDMI pass through with the receiver to the monitor.

Ok so I hooked it up to the HDMI out on the 1080ti and the surround works, but the receiver shows up as 2nd display, so I assume it's being sent a video signal. I'm worried about how that will impact gysnc and overall performance now, as I don't want the additional video signal.

Disabling the display(AVreceiver) through windows or nvidia control panel all disabel the sound as well.

If you struggle with gsync and running different refresh rates you can use another gfx card, say a cheapy HTPC card, for HDMI audio.
You cannot send HDMI audio without a video signal.
