A client wants to standardize signatures for all staff. Outlook 'n Exchange 2010.
Some standard template with customized fields naturally for each staff..user, phone/extension, e-mail addy. I see some scripts to push out via GP that pull that info from AD, but it seems people can still go in and edit after that.

Anyone use some of those 3rd party plugins (and if so..suggest?) to manage company-wide signatures that seem to lock them down better?

Just figure out how to put them in their spam software disclaimers.. You just have to figure out how to personalize them.

We have a client that uses CodeTwo, and it works quite well - we maintain about 5 different signatures total, based on the user's department - just toss the user into the appropriate AD Security Group and that's it.

Might be a little bit of a chore if your AD environment doesn't have the proper information populated, however. Nothing a little scripting can't take care of.

We only have 18 employees so filling in the missing info will not be that bad. It is just that we change out our signatures all of the time for whatever event the company is trying to promote at the time and there is always someone who does not do it and someone whose signature is then slightly different.
