whats the pros and cons to them both?

Im sure that you fools will say that hardware is better, but is it really needed.

I'm on WinXP with a NF7-S 2.0

Hardware is vastly superior, since its impact on the CPU is minimal in comparison, not to mention the availablity of on card caches, dedicated XOR engines, and the potental for 64bit PCI slot throughput, check out the Advanced HDDs Issues sticky thread
specifically read all the Dyanamic Disks links for the limitations of Software RAID
