I'm trying to setup a software KVM for 2 computers and 3 monitors. The setup I want is to have PC 1 to have 2 monitors, and PC 2 to have 1 monitor, but I want the PC2 monitor between the two other monitors. Is that possible?

I don't have 3 monitors to test but can you:

Hook up pc1 to all three monitors, but disable the middle monitor via display settings?

Hook up pc2 as you like.

Use this software
 
Attach all three monitors to your 'main' PC, then use remote desktop software across your network to remote into the 2nd PC and display that connection across the outer two monitors. I've used remote desktop software quite a bit, but never tried it over two monitors, so I don't know if that will be tricky or not.
