SLI or no?

Please forgive my ignorance.....when running an sli capable mboard, can the two vid cards be run separately to drive 4 monitors? Looking at a setup for a camera monitoring pc using 4 each 42" lcd tv's as monitors. Have one similar already running with a pci-e and pci card driving two monitors each, just wondering if I can do the same with two pci-e cards....thanks.
 
I've never tried it, but I would think it should be possible. The Nvidia control panel has an option to disable SLI.
