If you are going to get a top of the line computer, and you want to get as much power out of your video cards, then you definately want to go with SLI. SLI requires a very powerful CPU to make it worthwhile, so I would recommend not going with SLI unless you've already maxed out your CPU, so get an FX-55 or 4000+ if you want SLI.
