Single SLI vs. Dual?

Right now I'm prototyping a system which has rather large power supply requirements. I entered in all the available information to the power supply calculator and came out with ~550w-600w, with 38a 5v and 30v 12v without having the correct Nvidia 6800 ultra power draw requirements.

The system will be like this:
dual opteron
dual 6800 ultra / dual quadro fx
2gb ram
8x sata harddrives with hot swap cages
multiple high speed networking channels

These systems will be going full tilt constantly and so I need a real reliable power supply. From looking on this forum it seems like the best company to go with would be PCP&C, except that their best power supply is still a little low on the ampereage for the entire system (simply from a speccing point of view).

So now I am faced with trying to wait for a very large SLI power supply from a reputable company or combining two already reliable power supplies to give plenty of overhead for upgrades.

PCP&C will be releasing a 750 watt 3x +12V rail (Common Plane EPS12V) EATX supply
and a 800 watt 4x +12V rail (Split Plane EPS12V) EATX supply, but Like the Enermax 565 series supplies they arent in the distribution channel yet

there is a 700Watt Zippy Emacs that newegg stocks
past that there asre the Redundant and N+1 supplies
they are quite expensive again Id recommend Zippy Emacs
