Hi all,
My motherboard is a EVGA X58 FTW3 132-GT-E768-TR LGA 1366 Intel X58 SATA 6Gb/s USB 3.0 ATX Intel Motherboard

my CPU is a Intel Core i7 quadcore 960 @ 3.2GHz, and I have 16 GB RAM (4x4)

RAM is CORSAIR Vengeance 16GB (4 x 4GB) 240-Pin DDR3 SDRAM DDR3 1600 (PC3 12800) Desktop Memory Model CMZ16GX3M4A1600C9

I heard from someone that I should only be using the RAM in multiples of 3, so apparently I don't know what I'm doing. Will my performance be faster if I remove one of the sticks of RAM? Or would it be better for me to get something like this:
G.SKILL Ripjaws Series 24GB (6 x 4GB) 240-Pin DDR3 SDRAM DDR3 1600 (PC3 12800) Desktop Memory Model F3-12800CL9T2-24GBRL

or this
Kingston 24GB (3 x 8GB) 240-Pin DDR3 SDRAM DDR3 1333 Desktop Memory Model KVR13N9K3/24

Yes, you want to install RAM in threes since the X58-based systems are triple channel DRAM. In theory 3 x 4GB should be faster than 4 x 4GB. When using 4 x 4GB you have triple channel for the first 12GB and the memory between 12GB-16GB is running in single channel mode. It's called Intel Flex Memory.
Your best choice would be just to take out 1 stick or just buy another 2 sticks of the same speed rated RAM. A dual channel kit of the same brand and speeds will work and be cheaper than buying a 3 x 8GB kit.

That should match what you already have:
