Is this one of the things they took out to make space? I notice that all of the SFF barebone systems I have been looking at don't offer dual channel RAM. Wouldn't this be a big performance hit? Are any of the manufacturers out there working on getting dual channel RAM into these systems?

Dual channel memory has always been made out to be a much bigger deal than it really is. With limited PCB space, mainboard manufacturers have to decide between a marginal to small performance hit, or a reduction in features. It seems that features sell better than performance, and with good reason, but that's what happens when the market demands more (performance and features) from less (space).
You need to read around the forums a bit... you seem headed toward disaster.
The type of northbridge the shuttle-sized SFF uses will tell you whether it supports dual channel ram.
...and the difference between DC & SC is between 0-5%. Don't concern yourself with that.
