My Gigabyte Z77X-UD4H LGA 1155 motherboard manual and Intel state that RAID should not be enabled in the BIOS on a drive with an existing installed OS. I have 2 Intel 520 series 120GB SSD. So is my only option to erase and reinstall everything on the SSD after I enable RAID in the BIOS?

You could clone to another drive and then copy (clone) the data back once you have created the new RAID.

What kind of RAID are we talking about here ? Usually you can't go from one drive to a RAID with controllers (with Linux/Unix you can). Cloning, with a hard drive as an intermediary, is indeed a possibility, especially if you put it on the Marvell 88SE9172 controller of your mobo, that way your can enable Intel RAID, install the drivers, RAID the SSDs, and clone back, it should work.
