Anyone know who manufactures the PSU's of enterprize class servers and workstations or have good links to information about them?

Zippy/Emacs mostly, Enermax makes some high-end redundant stuff, and FSP OEMes for a ton of people.

^ and Ablecom which I think is exclusive to Supermicro

there are several others like I-star, Elan Vital ect, but personally Id stick with Zippy-Emacs
buy only SSI compliant supplies (Server System Infrastructure)

you can get the EPS12V, EPS1U, EPS2U and EPR12V (Redundant) specs from the SSI link above
what else did you want to know?

here is a somewhat dated article on N+1 redundant supplies
Power Supply System Integration Part 1: Single Source Fault Tolerant Power Systems @ powerelectronics
though according to gee they arent employing ORing diodes much anymore, opting for MOSFETs
