Server 2012 backup corrupt?

Greetings, I am coming to you after trying to troubleshoot my problem for the past few days.

My problem is that I am unable to restore about 2.16TB of data from a backup vhdx.

My setup is the following:

Server 2012
amd quad core
12GB RAM
2TB HDD x3 in storage pool/parity (Backup is stored here)
3TB HDD (blank)

Whenever I try to use the restore wizard it gives me an error (can't mount vhdx) or it will display no information when I click the "plus sign" to expand my backup.

I've also tried mounting the vhdx and it shows up in the disk manager, but, the file format shows up as RAW and I am unable to access any data.

I will admit that I am a novice when it comes to server 2012, I would like to know if anyone has had a similar problem and what did they do to fix it.

Also, is there a recommended program that I could use to recover data directly from the vhdx?

Any advice would be much appreciated. Thanks.
 
I have been able to use R-Studio to recover some data, but not all. Most of the files/folders it is retrieves seem "garbled".
