I'm building a P3 workstation and I was wondering if Seagate's notebook HDD's might be more reliable. Speed isn't a major concern. Also, how would I mount a notebook HDD in an ATX case? Is that even possible?

yes
but it generally requires an adapter, matchup the pinout it has to a standard IDE
as far as reliable, well a 2.5" form factor HDD is much more rigid and robust when it comes to movement, but unless its a LAN party box...
