Darn near anything... Sandisk makes great ones. I use 2 PNY 4GB and a 2GB Sandisk extreme III and haven't had any problems.
You'll fit about 1000 Large JPEG Fine images on the 8GB card, maybe more. Nikon's "how much left" system is a little conservative.
The higher the "class" of the card, the happier you'll be when it's time to take it off. My PNY cards say class 4, but they do about 15MB/sec.

I love my exIII. Wicked fast.. If you're shooting raws, you're going to need a big card. If you're shooting JPGs, you don't need the massive cards. Most people starting off are not going to fill a 4GB card in one session between visits to a computer, unless you're wasting shots like a madman and just plan on weeding the bads out later.
