Would their be a real noticeable difference if I went to sata drives? If so, what would it affect? Please give me examples like load times, access times, etc. and about how much faster it would do those things.

Only if the drive it's replacing is older and not a comparable performer. Many of the newest drives are upping platter densities which helps with STR(sustained transfer rates), though seek times are still average for most. If a new drive is offered in both interfaces, there most likely will be no performance differences. Since SATA is the newest tech, the offering of new drives in PATA config is dropping.
