For SATA hard drives, is there any difference in stability or performance if you have a PSU that didn't come with any SATA connectors and you had to use an adapter cord that plugs into a standard 4-pin Molex connectors and converts to a SATA power connector?

Help greatly appreciated.

Doesn't matter at all, just don't plug in both at once if you have adapters as it will void any warranties if something does go wrong.

Just out of curiosity, what was the point in giving SATA a dedicated power connector if there's really no difference?

There is a difference in the shape of the connector. The ground lines make contact before the power-carrying lines to support hot-swapping the drives.
