There is no real advantage. All a larger resevoir will do is create buffer so your water temp does not heat up as fast going from idle to load. In the end though it should reach the same temp as as a smaller res or inline system.

Pretty much. It acts like a capacitor and stabilizes the temperature in the system. While it'll take a longer time to get cool once a load is removed, it'll also take a longer time to get really hot, perhaps saving your components if your fans fail.
