RAM for x79 video editing?

I'm upgrading my desktop with a focus on using it for 1080p video editing (and secondly the occasional FPS gaming). Here is what I have already that I don't plan on upgrading:

NVIDIA GTX 670 FTW
NVIDIA 8800GTX (for physx only, might not use it after upgrading)
CORSAIR AX750 PSU
SSD & HDD
ATX case

I need a mobo, cpu, and ram. Currently looking at the ASUS x79 Deluxe (HERE, note this is NOT the old P9X79) and the newly released IB-E i7-4930K (HERE).

I'm lacking in the RAM department though. I think I've narrowed it down to these:

CORSAIR Vengeance Pro 32GB (4 x 8GB) DDR3 1600

G.SKILL Ripjaws Z Series 32GB (4 x 8GB) DDR3 2133

Which of these would be better for video editing purposes? One has tighter timings while the other is faster. Is there something else I should consider?

I potentially plan on overclocking this system considering the capabilities of both the mobo and cpu, but nothing extreme as I definitely need stability when doing long rendering with all cores pegged. The CPU will be liquid cooled with a CORSAIR H60.

I would appreciate any advice...last time I built a system was ~2008. Thanks!
