I would like to use 2 M.2 SSD drives in RAID, indeally some kind of external enclosure.
I googled it and few non-RAID enclosures showed up, but is there one with RAID?

Reason is, I would like to have 8TB SSD, but those are silly expensive, so thought I would RAID 2x 4TB.

you won't get the speed of RAID 0 when going external.
See if your motherboard supports bifurcation and if it does, get a PCIe mulit-NVME card.
If you mobo doesn't support it, buy one that has enough M.2 slots you plan to use or one that supports bifurcation and get the PCIe card.

Don't do hardware-driven RAID, internal or external.

Can as well make the step to ZFS which has RAID levels built in.
